INGREDIENTS:
- 1 Angel Food Cake (make a homemade or buy one at the store)
- Peppermint Whipped Cream
- 2 cups heavy cream
- 40 starlight mints
- 2 candy canes or 4 mints, crushed
INSTRUCTIONS:
- When your angel food cake is completely cooled, slice it in half horizontally.
- In a heat proof glass bowl combine the starlight mints and 3 tablespoons of the heavy cream.
- Microwave for 2 minutes and then whisk until it is smooth and creamy. Add 2 more tablespoons of cream and whisk to combine. Set the bowl aside to cool completely or put in the fridge to cool faster. Stir occasionally.
- Whip the rest of the cream until frothy and then with the mixer running, add the peppermint cream in a thin stream and continue whipping. Beat the peppermint cream until you have soft peaks (this won’t quite get as stiff as usual because of the candy).
- Put a generous amount of the whipped cream in the filling of the cake and then frost the cake with the rest of the peppermint cream.
- Sprinkle the top with the crushed candy and serve immediately or refrigerate until ready to serve. But if you are going to refrigerate then don’t sprinkle the candy on until you are ready to serve. The candy will melt in the fridge.
